The research will investigate consumer perceptions of the nutritional value of seaweed in Southeast Asia using data collection tools developed in the UK. Information will be collected on the dietary acceptability of seaweeds and seaweed-based foods in Singapore and an audit carried out of the number and type of seaweed-based products that are available in the Singaporean outlets. The findings of this study will further collaborative work between Newcastle University researchers in the UK and Singapore and have the potential to lead to cutting edge publications in the area of food acceptance and consumer studies.
